Belonging to the grower Champagne movement, Clouet’s roots begin in 1741 in village of Bouzy in the Montagne de Reims region of Champagne. One of Champagne’s most historic villages, Bouzy (pronounced just like it sounds, ha!) was most known for its production of red wines, labelled Bouzy Rouge. The wines were traditionally served at the coronation of kings in neighboring Reims, the prized wines before sparkling wine dominated production (and our hearts). Unique to Bouzy, brut rosé is made with a small addition of still Pinot Noir, adding a touch of color to the final wine while maintaining the precision and poise Champagne has long been known for. The brilliance of Clouet’s wines is the remarkable layering, beyond the aromas and primary palate, an elegance shines through: raspberry mousse, strawberry compote, banket, and roasted hazelnuts. This wine has long been a hallmark and fixture of Bistro Bella Vita’s wine program, a testament to Clouet’s winemaking practices, thoughtful vineyard practices, and ultimately, the wine in your glass!
